I get so much joy from: I consider that my greatest success is when the wine which I pair with the food does work well. It is always a pleasure when the food gets better with the wine I pair it with.
This is how a winemaker can get on my wine list: I am very lucky since the restaurant where I work keeps its wine list very flexible, which means it may be revised and reprinted daily. So if a new wine works well with a dish from the menu or if it is a good wine on its own, we just print the wine list again including this new wine.
I would never do this: I would never tolerate the situation that I do not enjoy my profession or do not find new challenges in it every day. I am convinced if there is just one minute at my work I do not enjoy 100 percent, I need to find a new profession.
I would never do this again:
I could do without this in my profession: I do love my job as it is always full of challenges. It is a never-ending learning process. A different day always provides different guests and different situations that all need to be treated in different ways.
If I were alone on an island (with a refrigerator!) I would have this with me: there would be several bottles of champagne. I especially enjoy the vintage blanc de blancs so I would choose Ayala, Louis Roederer, Pol Roger, Salon. I am a big fan of the local (Hungarian) grape variety Furmint, so I would definitely take some older vintages of Tokaj or Somló regions.
