I love this about my profession: The interaction with three main actors in my professional job: clients, chef, and winemakers.
My most important experience was: in 2000, the day when Mr. Leboeuf (general manager of the hotel de Crillon) purpose me the chef sommelier job at 28 years old !!
I get so much joy from: the visits int the vineyards, contact with the nature, and meetting winemakers.
This is important to me with my team: To share my experience of sommelier job and sommelier competitor, i can't work without the idea of transmission.
I would never do this: A wine list without any liberty to do the selection.
